These gins are distinctly savoury, so think of more saline attributes (such as olives, sea salt or even cheese) mingled with herbal notes (thyme, basil, olive leaf, pepper - just to name a few.) 

While savoury gins can be made in a variety of styles, from minimal and clean right through to big, rich and flavour filled. We must note that the savoury profile extends way beyond just the flavour, and deep into the field of texture and salinity. Many distillers really looking to re-create a mild oily mouthfeel to coat the palate without disturbing the gins viscosity.
