This Western-style gin from Portland, Oregon, was most noted for its famous owner – Ryan Reynolds – but he doesn’t own it anymore. It’s made in the USA and is bone dry with almost zero residual sugar. With delicious lavender and citrus notes in a creamy-rye spirit base. Rumour has it that you can only make an aviator cocktail with Aviation Gin, which isn’t true either – the aviator cocktail predates the gin by nearly 100 years. We recommend violets for this as a not-so-subtle nod to the aviator cocktail which is built around Crème de Violette.
