Aviation

There’s a myth that the Aviation cocktail can only be made with the gin of the same name. It’s not true and we reckon the Plan B Pepper-Zest gin gives this Aviation a brand new dimension. The cocktail is apparently named due to the crème de violette giving the cocktail a pale sky-blue colour and it dates from the early age of aeronautics when air travel was a glamorous luxury that only the rich could afford. 

Ingredients

40mL Plan B Pepper-Zest Gin

20mL Lemon Juice

10mL Maraschino Liqueur

10mL Crème de Violette

Method

Traditionally shaken, we recommend combining all the ingredients over ice and stirring for approximately 20 seconds instead. 

Corpse Reviver #2

As the name suggests, The Corpse Reviver is one of a category of pick-me-up cocktails that were prescribed by bartenders of old to revive those souls that appeared in their bar feeling worse for wear from overindulgence in the same place the night before.

Ingredients

20mL Bondi Liquor Co Citrus Gin 15mL Lillet Blanc

15mL Cointreau

20mL Lemon Juice

2-3mL Absinthe (in an atomiser)

Method

Combine all ingredients except the Absinthe in the shaker with ice. Shake until the shaker is ice cold on the outside. Serve in your glass and spray the Absinthe over the top.

Earl Grey Sour

 

You’ve likely had, or at least heard of, a Whisky Sour, a standard in the dark-spirit cocktail canon. Have you tried a Gin Sour yet? It’s the same drink with a different spirit swapped in—a light, refreshing and mildly botanical sipper for any season or occasion. And this brilliantly purple sour is our most popular spin on this 19th century classic. The team at Canberra Distillery have outdone themselves with their Earl Grey Gin! And the Wonderfoam replacing the traditional egg white makes this sour a vegan-friendly affair.

Ingredients

45mL Canberra Distillery Earl Grey Gin

20mL Lemon Juice 

30mL Simple Syrup (Sugar) 

1mL Orange bitters 

Wonderfoam (included with the gin) 

Method

Pour both pre-mixed bottles into the shaker, fill with ice and shake until the outside of the shaker is cold. Pour and enjoy. Float the pansy on the foam.

Rhubarb Fizz

Step aside Gin Fizz - let us introduce you to our new favourite variant of this all time classic. The team at Bondi Liquor Co have created a Rhubarb infused gin that is the star of this show. 

Ingredients

50mL Bondi Liquor Rhubarb Gin

30mL Lime Juice

15mL Simple Syrup

Wonderfoam (included in the gin) Soda to top

Method

Pour all ingredients (except soda) into the shaker, top with ice, shake until really cold. Pour into your tall glass and fill, to your taste with soda.

Whisky Sour

Sailors would take huge amounts of lemons, limes and oranges on voyages. They would also bring alcohol, and the best alcohol was kept at room temperature, like whisky and bourbon. The whisky sour was a perfect combination of citrus, to combat scurvy, and whisky to quench the sailor’s thirst.

Ingredients

50mL Maker’s Mark Bourbon

30mL Lime or Lemon Juice

15mL Simple Syrup

Wonderfoam (incl in Whisky) Angostura Bitters (incl in Whisky)

Method

Pour all bottles into the shaker, fill with ice, shake until it’s too cold to hold. Pour into your glass, enjoy. Garnish with an orange wheel.

Old Fashioned

Traditionally served in an “old fashioned glass” which got its name simply because it existed before the cocktail did.

Ingredients

50mL Woodford Reserve Bourbon 1-2mL Bitters

1 Sugar Cube

Ice

Method

Place the sugar cube in the bottom of your glass, pour a small (3-5mL) of your bourbon on top and use a spoon to break apart and muddle the sugar cube. Once the sugar is partially dissolved, fill the glass with ice and pour the remainder of the bourbon in.

French Martini

The French martini is a vodka- based cocktail. It was invented in the 1980s at one of Keith McNally’s New York City bars. It next appeared on the drinks menu at McNally’s Balthazar in SoHo in 1996. However, the cocktail was produced during the 1980s–1990s cocktail renaissance. Trust us, it’s a crowd pleaser!

Ingredients

30mL Absolut Vodka

30mL Chambord

45mL Pineapple Juice

Method

Pour all the ingredients into the shaker, top with ice and shake vigorously. Pour into your martini glass and garnish with freeze dried raspberries.

Vesper

The Vesper, also known as the Vesper Martini, was made famous by James Bond. The cocktail was invented by none other than Bond author Ian Fleming. The drink first appeared in his book “Casino Royale” which was published in 1953, and the cocktail is named for the fictional double agent Vesper Lynd.

Ingredients

45mL Bass & Flinders Wild & Spicy Gin

30mL Absolute Vodka

15mL Lillet Blanc

2-3mL Dry Vermouth

Method

Combine all the ingredients over ice and stir. Despite what James Bond said. Garnish with lemon.

El Diablo

The origins of the El Diablo are typically traced back to Trader Vic’s, the mid-century tiki-bar chain founded by Victor Bergeron. The drink appeared in Trader Vic’s cocktail manual in 1946, and Bergeron put a “Mexican El Diablo” on his 1947 cocktail menu.

Ingredients

45mL Anejo Tequila

15mL Crème de cassis

25mL Lime Juice

60mL Ginger Beer

Method

Shake the first three ingredients with ice until cold. Pour over new ice into a tall glass and top with ginger beer. Garnish with lime.

Paloma

Some believe that it is named after La Paloma (“The Dove”), the popular folk song composed in the early 1860s. Diffords guide states it was created by the legendary Don Javier Delgado Corona, owner and bartender of La Capilla, in Tequila, Mexico.

Ingredients

50mL Reposado Tequila

12mL Lime Juice

4mL Agave Necter

Capi Grapefruit Soda

Method

Add the first three ingredients to your glass, fill with ice and top up with Capi Grapefruit to your taste.

Paloma

Some believe that it is named after La Paloma (“The Dove”), the popular folk song composed in the early 1860s. Diffords guide states it was created by the legendary Don Javier Delgado Corona, owner and bartender of La Capilla, in Tequila, Mexico.

50mL Reposado Tequila

12mL Lime Juice

4mL Agave Necter

Capi Grapefruit Soda

Method

Add the first three ingredients to your glass, fill with ice and top up with Capi Grapefruit to your taste.

Daiquiri

The cocktail is named after the location it was created in the town of Daiquiri on the southeastern tip of Cuba, and was supposedly invented in 1898 by an American mining engineer named Jennings Cox.

Ingredients

50mL Brix White Rum

30mL Lime Juice

20mL Sugar Syrup

Method

Shake all the ingredients over ice. Pour and garnish with a lime wheel.

Negroni

A Negroni is an Italian cocktail, made of one part gin, one part vermouth rosso and one part Campari, garnished with orange peel. It is considered an aperitivo.

Ingredients

30mL Giniversity Australian Native Gin

30mL Campari

30mL Sweet Vermouth

1-2mL Orange bitters

Method

Stir all ingredients over ice for 30 seconds. Garnish with orange.
